Fish Mould for your Valentine !!!



Ingredients 
  • Fish ( Rui/ Katla or Becti) 100gms
  • Finely chopped onion  2tbsp
  • Ginger- Garlic-Green chilly paste 2tsp
  • Finely Chopped Coriander 
  • Grated Carrot 4tsp
  • Greenpeas 1/2 cup ( perboiled )
  • One Small Potato boiled & mashed
  • One Egg ( well beaten)
  • Refined oil 2tsp
  • Mustard oil ( very little)
  • Butter to grease the mould
  • Salt, a little sugar and a very little turmeric powder
  • Fresh Lemon Juice 1/2tsp
  • Two Cheese cubes ( grated)
Procedure 
  • Marinate the fish with little salt, turmeric powder and shallow fry in mustard oil  and de bone the fish 
  • Heat refined oil in a pan and fry onion till brown. 
  • Gradually add Ginger-garlic-green chilly paste followed by mashed potato, fish paste, carrot, green peas
  • Add a little sugar
  • Sprinkle finely chopped coriander leaves and lemon juice
  • Then add the beaten egg and mix them well . Your FISH-CAKE MIX  is ready
  • Grease a mould with  butter
  • Add the FISH-CAKE MIX and add grated cheese from top. 
  • Cook for 20 minutes under pressure cooker
  • Keep aside for another 5 minutes outside the cooker.
  • Turn the mould upside down and garnish with Capsicum ( specially cut for Valentine's Day)

Mexican Egg dish


This is one of Rukmadakshi's recipe that I learnt from a popular program on Zee bangla, Ranna Ghar. I modified it slightly for the sake of calories, using only 4 eggs, instead of 6. This is an awesome snack and a complete in itself, when served with toasted bread and soup.

ingredients4KK 
1. Egg - 4
2. Boiled chicken pieces - 1 cup
3. Stir-fried prawns - 1 small cup
4. Grated cheese cubes - 2
5. Chopped Onion - 1 cup
6. Chopped Tomato - blanched - 1 cup
7. Finely chopped ginger - 1 teaspoon
8. Finely chopped garlic - 2 teaspoons
9. Finely chopped parsley or oregano
10. Paprika powder and red chilli flakes
11. Refined oil and salt

Heat oil in a non-stick pan. fry the onion  and tomatoes. then add garlic and ginger and oregano. Add the chicken pieces along with prawn. Saute for two minutes. Cover the mixture with 4 eggs (beaten). Sprinkle grated cheese, paprika powder and red chilli flakes. Close the lid and simmer for 5 minutes, till the egg settles and cheese melts. Remove from heat. Cut into wedge-shaped slices, like a pizza and serve hot.

Chilly Cheese Uttapam ... simply AWESOME !

 
Whenever I go to the BIG BAZAR at Kharagpur we somehow end up having  "Chilly Cheese Uttapam" . It's simply GREAT! If you happen to be in the neighbourhood do not miss this  CCU @ Big Bazar, Food Court.

Last night I decided to make it at home, in my kitchen. Though I did not have the time or the energy to make sambar, the coconut chutney more than made up for it when I served it with the crispy mout;watering uttapam.  Unfortunately I do not have a grinder-mixer in our bungalow Kharagpur  (where my husband is a professor at the School of Management at IIT ) so i had to ask my maid to paste it using a SHIL-NORI.
Do you remember the famous song? "Shil-Nori bina chutney kaise boni ?"   Anyway enough by way of prelude; time for the real stuff ... for which you need the following ingredients to make this CCU
  • 2 Cups of rice flour and 1 Cup urad dal powder, soaked in water for over night and mixed well to make a thick batter.
  • pinch of salt
  • One large onion (finely chopped)
  • Green Chillies ( finely chopped)
  • Cheese (grated)
  • Refined oil
Heat a nonstick pan , grease it with refined oil and place1 tablespoon  thick  batter. Spread it with a spatula. Then sprinkle onion, chillies on top.Turn upside down and add grated cheese on the hot side of the uttapam. Keep it on the nonstick tawa till it becomes crispy and the cheese melts.

Serve hot with coconut chutney.

Cheezy Mutton Pie ..a HEALTHY recipe



  • ingredients4KK
  •  Brown Bread (ten pieces) :  sides are cut and soaked in milk
  • Mutton Keema (250 gms) : Boiled and cooked in usual procedure 
  • Boiled  potato (200gms) : Grated and mixed with salt and peeper
  • Carrot (one ) : Grated
  • Beet Root (one) : Grated
  • Green Peas (shelled, 100 gms)
  • Egg (one, well beaten)
  • Cheese (Grated, 2cubes)
  • Butter for greasing the pot

  • Take an Oven proof square pan .[ I use Borosil ]
  • Grease the pan uniformly with butter and then arrange as follows :
  • First put the mashed brown bread  previously soaked in milk
  • Then the cooked Mutton keema (usually cooked by frying finely chopped onion, grated garlic, grated ginger and a few chopped grrn chillies)
  • Now the grtaed boiled  potato 
  • Add the beaten egg uniformly on top
  • Then the veggies
  • Finally the grated cheese
  • Bake in an OTG for 1/2 an hour at 180deg Celsius or put it in microwave for 10-15 mins and then grill for 6mins. 
Cheezy mutton pie is a complete dinner meal and this recipe should suffice for 2-3 persons.
I learnt this recipe from my friend MAUSUMI GUPTA who not only cooks very but is a gourmet as well.

Cheesy Garlic Toast with Hot Soup !


As you know that my son Shubhayan is a student of BITS Pilani and stays in a hostel attached to the college. He is not only fond of all that I cook at home but he is even more enthusiastic about getting my recipes -- including the pictures -- into this blog. So I miss him a lot while I cook and my own enthusiasm about cooking and blogging takes a hit. What this means is that on most evenings I generally make do with this Cheesy garlic Toast along with a soup -- a combination that includes vegetables/chicken/egg and is a complete dinner of sorts for me and my husband ! Please try this Cheesy Garlic Toast and I will be back in this week end with a lovely Chicken soup recipe for all of you!!!

Ingredients :
  • Any kind of fresh Bread of your choice [these are now available in all super markets/bakeries. please do not use the standard sliced bread...]
  • Finely chopped Garlic
  • Sandwich Spread [I often use the FUN FOOD brand ]
  • Oregano
  • Black Pepper Powder
  • Grated Cheese
Procedure :
  • Cut the Bread loaf according to your choice [ I love to do this...because presentation is more important !!]
  • Put the sandwich Spread with the help of a knife uniformly over the braed pieces.
  • Arrange grated cheeseand chopped garlic together.
  • Sprinkle Oregano and black pepper powder on top.
  • Toast the bread pieces on a OTG at 180 degree Celsius for 10 minutes till they are light brown in colour and crispy!!
  • Serve with any soup of your choice.

Pizza-de-India



Ingredients:

  • Bread (preferably French loaf)
  • Sandwich spread
  • Pizza Sauce (made by mixing home made Tomato Puree, Oregano, Black pepper, Chilly flakes, finely chopped garlic, Olive oil, salt and a little sugar )
  • Cheese (cut into small pieces)
  • Onion, Capsicum, Tomato (finely cut)
  • Tomato Ketchup
  • Oregano and chilly flakes


Procedure:

Cut the French loaf into two halves lengthwise. Then using a knife first coat the bread with a layer of sandwich spread and then spread the pizza sauce to form a thick layer. Arrange onion, tomato, and capsicum slices as per your choice on the bread. Then add the pieces of cheese. Finally add a little tomato ketchup. Bake in a preheat oven for ten minutes. Sprinkle Oregano and chilly flakes.

Serve hot with chilled Cola.
