Prawn Malai Curry


  • ingredients4KK
  • Prawn: shelled, deveined and cleaned thoroughly
  • Coconut: grated and ground in a mixie along with green chillies, nutmeg and javitri.
  • Ghee and Mustard oil
  • Ginger paste
  • Onion paste
  • Garlic paste
  • Garam Masala: Coarsely ground
  • Green Chillies
  • Kismis and Bay leaf
  • Salt, Sugar and Turmeric powder

Heat oil in a pan. Fry the onoin paste till golden brown. Add garlic and ginger paste, bayleaf, and a hand full of kismis (rasins). Saute for a few minutes. Then add the coconut paste along with salt and sugar as per choice. Sprinkle turmeric powder into the mixture. Then add the Prawns. Fry them in the thick gravy for five minutes. Add a little water and bring it to boil. Add ghee on top along with Garam Masala. Garnish with green chillies.

Serve hot with rice/chapati/fried rice.

special aloo posto

This is my husband, Prithwis' favourite recipe. He is an engineer from IIT KGP, a PhD from UT Dallas, Texas. Apart from a being a complete food-freak, he is the most delightful person on earth. You can visit his web-space on http://www.yantrajaal.com, which completed ten years this May

Ingredients:
  • shrimp (shelled, deveined, and cleaned) - 200gms
  • posto (kus-kus) - finely ground with a few green chillies and water -1cup
  • potato - diced
  • patol (parwal) - finely chopped
  • jhingey - chopped
  • paanch phorone (a combination of five spices - kalanji, cummin, fenugreek, saunf, mustard)
  • mustard oil
  • green chillies
  • salt and turmeric powder
Procedure
Heat mustard oil, and add add 1tsp paanch phorone to splatter. Then add all the vegetables. Fry them for 10 minutes. Now add the shrimp, salt and turmeric powder, and simmer for another 10 minutes. Do NOT add ANY water. Pour 2 tbsp mustard oil, and add the slit green chillies, when the potato is completely cooked.

Serve hot with rice.

LauChingri / Shrimp and Gourd Curry


Ingredien.ts:
  • Gourd or Lau : 500 gms ( it's skin peeled off and cut into small cubes )
  • 1 Potato : cut into pieces
  • Shrimp : 250 gms.
  • Ginger-red chilly paste : 2tsp
  • Cummin(1/2tsp),Corriander(1/2tsp) and Black Pepper(1/4tsp) : made into a paste
  • Tomato Puree : 2tsp
  • Mustard oil :4tsp
  • Ghee : 2tsp
  • Garam Masala : 1tsp
  • One Bay-leaf and 1/2 tsp cummin seeds
  • Green Chillies.
  • Salt to taste.
  • Turmeric Powder.
  • Sugar : 3tsp.
Procedure:
Boil the gourd (lau) for 2 minutes. Set aside. Fry the potato in oil and add bay-leaf and cummin seeds to splatter. Add ginger-chilly paste and tomato puree in it. Then add the shrimp and the boiled gourd together. Add salt, turmeric powder and sugar in succession. Add a little water. Bring to boil. Add the masala paste. Add ghee and garam masala from top.

Serve with hot rice.
